I love trout that has been gutted and cooked whole with seasonings. You can just wrap the fish in aluminum and cook it over an open fire, or in the oven.

Anyone else have a favorite fish recipe?

I like to keep things simple...if its trout or bass, we just clean them, season them lightly, then put them in aluminum and pop them on the grill. If we get catfish, we usually bread them with cornmeal and then pan-fry...they are great that way!

My husband's favorite way to eat fish is just to fry them up in the pan after cleaning them. We also grill them, using a special grill, so it doesn't fall through into the fire.

Have you ever smoked a fish? We had some smoked catfish at a restaurant once. My husband loved it!

No, I've never had smoked catfish! I do have a smoker at home though, so I suppose I could try it sometime. I wonder what kind of wood chips they use to smoke it...hickory, perhaps?

smoked sounds good, but I'm allergic to mesquite. It makes me quite ill.
