Foil Fish Fillets

Strong flavored fish such as bluefish and striped bass are delicious when prepared in this manner:
  • Olive oil
  • Red wine vinegar (Italian salad dressing may be used for the oil and vinegar).
  • Tomatoes
  • Onions
  • Lemons
  • Old Bay seasoning
  • Salt and pepper

Cut the tomatoes, onions, and lemons into slices and layer haphazardly on a large sheet of aluminum foil. Place whole fillets on top and sprinkle with salt, pepper and Old Bay. Layer more tomato, onion, and lemon slices on top and drizzle with oil and vinegar. Seal the foil tightly by bringing the edges together and folding over numerous times. Place on medium hot grill and close cover. Turn the package when you hear loud sizzling and cook for only a few more minutes. Leave the foil sealed until ready to eat.
